Life Lately


Sorry I went MIA for a lil bit there!

I got a lil holiday job on top of Scentsy events!! I've been a busy gal.

Hubby's parents come into town this weekend! I am so stoked. I really am a lucky girl to have some pretty amazing in-laws. We are also going to have a house full of people over for Thanksgiving. 

I love the Holidays and am so thankful to have family in town at least for Thanksgiving because Christmas will be tough without our families.

Chicken & Rice Stuffed Peppers

So, I started meal planning this past week. The time it takes to sit down and plan it out, really pays off when it comes time to going to the grocery store and after work when you don't know what to cook. Less stress. Going to the grocery store was a breeze! Minus the sold out chicken breasts... that's another story. 

If you've followed me on here or instagram, you know I LOVE Skinnytaste! Pretty much all the recipes on my meal plan for the next 2 weeks are all from Skinnytaste. 

I've been learning to cook and to cook with what I have, which isn't much. I pretty much adapt whatever I have to the recipe I am using. Luckily, everything has always turned out fabulous.

Thus, I give you this delicious recipe! 

Chicken/Rice Stuffed Peppers (for 2)
adapted from Skinnytaste

  • 2 large chicken Breasts, cooked & shredded. (Mine were marinated in Dale's, yum!)
  • 1 garlic, minced
  • 1/4 onion, minced or onion powder
  • salt to taste
  • 2 large green bell peppers, washed
  • 1 cup fat free chicken broth
  • 1 1/2 cups cooked rice or 1 Success boil-in-bag, cooked
  • 1 tbsp olive oil
  • Shredded Colby & Monterey Jack Cheese to sprinkle on top

Heat oven to 400°. Spray a little olive oil spray in a medium size saute pan and heat on a medium flame. Add onion and garlic to the pan. Saute about 2 minutes and chicken. Add 1/2 cup of chicken broth, mix well and simmer on low for about 5 minutes. Combine cooked rice and chicken together.

Cut the bell peppers in half lengthwise, and remove all seeds. Place in a baking dish. Spoon the meat mixture into each pepper half and fill it with as much as you can. Place all stuffed pepper halves in the baking dish and pour the remainder of the chicken broth on the bottom of the pan. Cover tight with aluminum foil and bake for about 35 minutes. Top with cheese and enjoy!!

An Awesome Hair Day

I got this pretty baby in the mail the other day. I'm in love!

No lie, I was super excited to get this offer from Misikko to review! These days (life in Hawaii) I rarely use my straightener. Most days I let my hair air dry but when we go to church or out for a lil date I whip out my blow dryer. Gettin' fancy y'all! Haha. 

My thoughts:

*This blow dryer is amazing. I felt like I was in a salon! Using it you can tell it is very high-end salon quality. 

*I like the fan speeds. My 'low speed' on my old blow dryer was way too low. The 'low speed' on the HANAair Pro Hair Dryer is perfect! Definitely to my liking.

*I love the strength of it. For you thick haired girls, this blow dryer would be a godsend for you. It's powerful and cuts out so much time. 

*I love the cord, 12' Extra Long. I was able to walk into my other room to use a better mirror and to cool off (we don't run our A/C during the day, unless it's really hot outside). I can't do that with my other blow dryer.

*If I ever get hot I may just use the hair dryer's 'cool' setting to cool off! Haha. Ghetto, I know.

*It's got a 2 year warranty! I love warranties. 

My only dislikes were that it's heavy. But, I mean, it could be a win-win situation. Get toned arms and gorgeous blow dried hair?! Me like. Also, my thumb kept pressing the cool button on accident. It got annoying after awhile. I wonder if anyone else has this problem? But that won't stop me from ditching my old dryer and using this pretty!

So, this is what my hair looks like on a normal day here in the land of Aloha.

 Scary, I know. And I clearly haven't been to the gym in a minute. Yikes.
